He developed the Fauchon store in Paris, France, on Place de la Madeleine in the 8th arrondissement. Given the high quality of his produce and packaged goods made by its suppliers, the Fauchon Company quickly became very famous internationally. |  |

Second best, but it will do Sep 10, 2011

Aux Anysetiers du Roy is the finest maker in the world, but I have to go to Paris for it. I cannot even buy it in Bordeaux. You may know them from their herbs de Provence sold by Williams Sonoma. But Fauchon is the great store in Paris, as well. Their mustards are princely. There was a time when United Airlines had them in their sky catalog for regular store price. No more. So this is the best you can do. This mustard does not keep. It loses its flower in short time, just one summer, especially sensitive to temperature, oxygen and light. So it is actually worth the price. Never cook with it. But you can fold it into really good cream to use on mussels and lightly cooked fish. It is strong, pungent and complex. Brush lightly on your best grass raised beef and semi-hard aged cheese.
This is a superb gift for the cook in your life, hint, hint...
